Here comes the solution with a twist. This watermelon rind Gazpacho is a perfect dish for hot days to refresh and hydrate the body.
Recipe: Watermelon Rind Gazpacho

Cooking time -1.30 hours
Ingredients Quantity
Diced watermelon rind 300gm
Red onion, roughly chopped 40gm
Cloves garlic 10gm
Jalapeno pepper 07gm
Long diced watermelon(garnish) 60gm
Fresh basil leaves 04gm
Olive oil 35gm
Salt 05gm
Ground black pepper 02gm
Amaranth cress(garnish) 01gm
Feta crumble(garnished) 05gm
Methods:
Place the watermelon rind, red onion, and garlic in a blender or food processor.
Blend until finely chopped.
Add basil, olive oil, salt, and pepper. Blend again until mostly pureed.
Refrigerate until firm, about 1 hour.
Pour into deep plate.
Garnish with water melon, amaranth cress, feta crumble and serve.
